It’s Lovely To Speak With You, Elvira, Can You Tell Us A Little About Yourself & How Your Incredible Journey Into Managing Bortolomiol Began?

“I am Elvira Bortolomiol, I hold the position of vice president of the homonymous winery. Before joining the company, I had various experiences abroad, collaborating with government and non-profit organizations in order to create social and economic sustainability in particular rural areas, such as in Benin in Africa and in South America.”

When It Comes To Pairing A Bottle Of Bortolomiol With Food, Do You Have Any Favourite Combinations That You Would Personally Recommend?

“Personally, I like the idea of ​​pairing bubbles with fish, I recently tried a dish of wild Alaskan salmon paired with our Rive di Col San Martino 70th Anniversary. The complex structure of this Valdobbiadene Prosecco Superiore marries this fish perfectly.”

Can You Tell Us More About Bortolomiol’s Commitment To Sustainability Both Now And In The Future?

“I like the idea of ​​imagining myself following the path traced by my father to preserve and protect our territory and our product and at the same time nourish myself with a vision that can project our sector towards a more sustainable future.

For us, environmental protection is a daily commitment, for some time now we have been working to improve this aspect year after year. The first project was born in 2008 when we decided to convert our family vineyards to organic, and then move on to the introduction of the Green Mark, a protocol that our winemakers follow which aims at the well-being of the vine and of the man who inhabits the area.

Then in 2018, with Indaco2, a Spin off of the University of Siena, we undertook a project to measure the carbon footprint and offset emissions with a few hectares of woods that, as a family, we own on Monte Cesen, behind Valdobbiadene.

From the evolution of that project, we achieved the EPD (Environmental Product Declaration) certification with our Ius Naturae Organic Valdobbiadene Prosecco Superiore DOCG Organic, which was a really important success for us. Today we plan to continue along this path in order to certify the entire company in the coming periods.

And we are proud to announce that our first sustainable report is almost ready to be shared with our stakeholders.”

Can You Share With Us One Of The Most Memorable Experiences You’ve Enjoyed With A Glass of Bubbly?

“One of the most beautiful experiences was certainly the moment of the publication of the biography of my father, Giuliano Bortolomiol. Last year, we published the second edition of his life, entirely dedicated to his passion, wine, Prosecco Superiore and the protection of the Conegliano Valdobbiadene hills.

We celebrated 100 years since its birth with a celebration at the Parco della Filandetta Wine & Art Farm and for the first time, we were able to read this precious volume. It was certainly an emotional moment uncorking the bottle of Prosecco Superiore DOCG and enclosing his entire life in a book.”
