Your majesty, welcome, we have searched high and low for a Traditional Method Sparkling Wine that bears your royal head, and after many long adventurous days and nights, we discovered, at the foot of the Dolomites in Italy, a winery, that call themselves, Cantina Rotaliana.

Built on tradition and steeped in history, the exploration of this Italian Winery is worth your royal time, your highness. Cantina Rotaliana

Located in Northern Italy, at the foot of the breathtaking Dolomites, near the renowned Garda Lake and the city of Trento, Cantina Rotaliana has over 80 years of experience in creating great tasting Wines and Sparkling Wines.

The winery is called Cantina Rotaliana because of a merger back in 1968, when the winery was first created in 1931, it was called Cantina Cooperativa di Mezzolombardo, the winery would then join forces with another winery, Società Enologica Rotaliana, to create the name we know today, Cantina Rotaliana di Mezzolombardo.

Their current head office was built in 2011 with modern production and storage areas along with stunning wine cellars and great marketing areas, even adding tasting and meeting rooms, the space accumulated is over 5000 square meters, all this makes them a fiercely competitive and dedicated wine-producer, able to respond to the challenges of growing global markets.

Aroma – “Soft zesty orange, orange blossom, blood orange, with ripe peach skin and apricots with a hint of pastry notes on the aroma.”

Flavour – “Orange skin, blood orange, orange blossom, orange floral, redcurrants, raspberries, herbal characters and a touch more to discover on the palate.”

Aroma – “Smooth, soft, relaxing, imagine sitting on an open terrace overlooking a magnificent lake in Italy in the morning, when your breakfast, a plate of croissants and pastries, is brought out before you. Wonderful pastry aromas, with soft ripe peaches, peach skins, silky and almost creamy with butter and cream over pastry with added notes of yellow fruits and yellow floral on the aroma.”

Flavour – “Delicate and elegant, with fizzy touched notes of peaches, peach skin, apricot, yellow rose petals, the texture almost leads into a squirty cream infused with peaches, delicate, fluffy and delightful, easy to relax and unwind with a glass in your hand.”

Aroma – “Tropical coffee, dried banana slices, cocoa beans, slow roasted pineapple along with freshly cut pineapple, with mango soaked in alcohol, yellow stone fruits, hints of herbal characters and various tropical spices.”

Flavour – “A silky warming elegant yet adventurous texture, with lemon, apricot, peach, mango, lime, and a touch of spice, with a cinnamon texture at the close on the palate.”

How To Make The Strawberry Blush Cocktail

  • 15mls of Strawberry Gin
  • 5mls of Ginger Syrup
  • 75mls of Sparkling Wine
  • Fill With Squirty Cream
  • Place 3 Strawberries On The Rim & Add Some More Squirty Cream

Strawberry Blush Cocktail Tasting Notes

Aroma – “Fresh strawberries and strawberry juices lavished in squirty cream on the aroma.”

Flavour – “A warming touch, coming from a spicy/tingly sensation of herbal strawberries combined with an orange blossom fizziness thanks to a faint gingery note that draws it all together, a strong and powerful conqueror, as the minutes pass by, the cream melts and adds a creamier touch to the flavours, opening up a softer/delicate interior.”

2012 Pairing Experience – “The soft, delicate peachy flavours come through and rise above the savoury fish notes, almost like wrapping the fish with peach flesh, the fish is soaked through and through with peachy flavours, a wonderful fantasy garden expression, leaving the fish in play while allowing for the Sparkling Wine to further shine.”

Rosé Pairing Experience – “Punchy orange and red berry/fruit characters rather take over the fish, until the very end, allowing it to come back into play, not one for fair play, the fish is set aside for the Sparkling Wine on this pairing.”

Extra Brut Pairing Experience – “The savoury fish blends beautifully with the Sparkling Wine, gifting it rich golden fruits, it almost tastes like the fruits are made of gold, zesty characters join, combining with the fish, soaking within, enhancing the fishy characters.”
