Let’s Meet The Bartender!

“I am an Italian Mixologist born in Milan; My passion for creating drinks started in 2017 in London. My bartending journey began as Barback at Heliot Cocktail bar (The Hippodrome LTD) and my hard work made me quickly become promoted to bartender; it’s still a highlight of my career, where I gained important skills and beverage knowledge from my mentors. After a couple of years, I had the great opportunity to open GMT cocktail bar located in Hard Rock Hotel, as a certified trainer bartender. I’ve travelled all around the UK, Europe and the USA, visiting different bars that inspired me to create unique signature cocktails. After getting a certificate in WSET wines and Mixology and Management, my way up in the industry started and I finally decided to move to Dubai in 2020. I joined Pierchic and have been impressing guests with my new successful cocktail list. I managed the bar program at the award winning Beefbar restaurant, with my excellent bartending skills, creativity and good personality that enhanced the customer experience. Next stop Ossiano. What Was The Inspiration Behind Your Adorbs Sunrise Cocktail?

“I created this cocktail from scratch, I wanted something refreshing that you can easily drink enjoying the sea view of Dubai, but elegant at the same time. Sweet and sour cocktail, rich and delicate on the palate. The colour clearly reminds all of the sunrises on a wonderful morning in Dubai.” – Stefano Podda

The Recipe For Adorbs Sunrise


  • Homemade Limoncello
  • Cointreau
  • Rooibos Tea
  • Passion Fruit
  • Almond Syrup
  • Prosecco Foam

How To Make The Prosecco Foam (450ml batch)

  • 180ml Prosecco
  • 90ml Lemon
  • 90ml Sugar
  • 90ml Egg White

How To Make The Adorbs Sunrise Cocktail

  • 40ml Homemade Limoncello
  • 20ml Cointreau
  • 35ml Rooibos Tea
  • 25ml Passion Fruit
  • 10ml Almond Syrup
  • Top Prosecco Foam

Garnish – Homemade Passion Caviar and Dehydrated Orange.

Shake well all the ingredients, fine strain and pour in a dessert wine glass. Top with Prosecco foam by a syphon.
