Josipovic Croation Sparkling Wine

With a phenomenal Mediterranean coastline, Croatia has a long history of utilizing seafood in Cuisine, and we’re going to be enjoying something they would have and still do enjoy in plentiful amounts, the Mussel, pairing it with one of Croatia’s own Sparkling Wine producers, who have created the Josipović Time label.

The Mussel, found within the Mediterranean, in Freshwater, lakes, ponds, rivers, creeks and even canals, it takes between 12-15 months for a Mussel to reach its marketable size, they can be harvested by hand or with a hydraulic-powered system, depending on the location in question.

The Mussel lives within its shell, which is longer than it is wide, the colour of the outside shell that is seen by us, is often dark blue/black or even brown, but on the inside, it has a silvery colour, somewhat nacreous.

The Sparkling Wine – Josipović

Starting with the goal of not producing another copy of Champagne, but staying true to themselves and producing something new and distinctive.

They accomplished their mission, with their Josipović Sparkling Wines displaying high quality with the unique and recognizable characters that they were after, they have three Sparkling Wine labels on offer, with some amazing and easy-to-remember names, Time, Jazz and Tango.

Aroma – “Red berries, raspberries, strawberries, mulled wine, sweet woody spices, earthy, and Christmassy on the aroma.”

Flavour – “A similar expression, sweet woody spices with red berries, cranberries, hints of blackberries as well on the palate, this tastes like a part of Christmas and would pair very nicely with some festive foods.”
