Interview With A Sommelier Felix Chun Chung Law

The World of Wine is beautifully showcased by an army of talented Sommeliers, who help the consumer discover their next favourite bottle, understand the different regions and pair a delicious meal with the right Glass of Bubbly.

In this feature, I speak with a man who has helped many people to discover the vast world of Wines and Sparkling Wines, his name is Felix Chun Chung Law, and let’s find out a bit about his life as a Sommelier.

Tell Us About Yourself

“My name is Felix Chun Chung Law, I am a head sommelier of Canton Blue in the Peninsula London (a luxury hotel located in Hyde Park Corner that opened in September). I am originally from Hong Kong and I moved to London one and a half years ago.

I hold a WSET diploma in wine and spirits, am a French wine scholar and I am preparing for my Advanced Sommelier exam for the Court of Master Sommeliers.

My passion is not only in wine but also in sake and Chinese Baijiu. There are still lots of things I want to learn and explore.

Apart from wine, I have so many interests like photography, hiking and cooking.

I also love to please my guests. Creating a memorable dining experience for my guests is the best part of my daily routine. Looking at those smiling faces leaving my restaurant makes me so satisfied and proud.”

Do You Remember Your First Experience With Sparkling Wine? When It Was And What Kind Of Wine It Was?

“My first experience with sparkling wine was probably a very long time ago when I was 18 in Melbourne. I bought a bottle of Australian sparkling wine to celebrate my girlfriend’s birthday. I didn’t really know about wine yet and I don’t even remember what it tasted like but I did remember the bottle bringing us joy and happiness.”

What Inspired You To Become A Sommelier?

“When I was a waiter, our head sommelier gave me a sip of old vintage Cheval Blanc.

I tried it and I got goosebumps immediately, and that flavour not only lasted in my mouth for so long, but also in my brain.

After that, I was so keen to learn about wine and I was so curious about how wine can show such a lot of different aromas. They are all made from grapes.”

During Your Time As A Sommelier, What’s The Most Surprising & Interesting Thing You’ve Learnt?

“Since I became a sommelier, I learnt about geography, learnt about history, science and economy.

I’ve learnt about different dining and drinking cultures. Every day I learn something new and this knowledge is very interesting and keeps me digging deeper.

The most surprising thing is that I have learned about so many things apart from wine through wine study. Wine broadens my horizons.”

What Advice Would You Give Inspiring Sommeliers?

“We respect tradition and we are not limited by tradition. Being creative and humble. Being open minded. It’s a lifetime journey to learn and explore. We learn something new every day.”

If You Sat Down For A Quiet Dinner, What Dish And Sparkling Wine Would You Choose To Enjoy Together?

“I am crazy about umami flavours. Oyster and beef tartar with caviar on top is always my favourite dish for a quiet dinner. I will choose a glass of 2018 Blanc de Noir Gusbourne to go with it and then there’s a tango dance shown on your tongue.”
