The World of Wine is beautifully showcased by an army of talented Sommeliers who help the consumer discover their next favourite bottle, understand the different regions and pair a delicious meal with the right Glass of Bubbly.

In this article, I speak with a man who has helped many people to discover the vast world of Wines and Sparkling Wines, his name is Giuseppe Lavacca. Let’s find out a bit about his life as a Sommelier.

Tell Us About Yourself

“Hi. My name is Giuseppe Lavacca, I’m from Trani (Puglia) Italy. I have worked in hospitality since 14 years old. It has been always my passion. Tailoring every day a new food & wine experience for the guests, it’s something unique.”

What Inspired You To Become a Sommelier?

“I still clearly remember, when for the first time I walked into a wine cellar. Was in a two Michelin star restaurant, and I was impressed by the number of wine bottles. Thanks as well to my wine mentor Fabrizio Franzoi who pass to me all his passion and knowledge. After, the curiosity to discover wine from all around the world and know all the people and stories behind each label, made the rest.”

During Your Time As A Sommelier, What’s The Most Surprising Thing You’ve Learnt?

“The most surprising thing as a Sommelier is when you go to visit the winemakers and they start to tell you all the history. And you discover how strong is the relationship among the traditions of the people and place and the wine himself.”

How Often Do You Find Yourself Recommending English Sparkling Wine?

“I like English Sparkling wines. I think now with global warming, England start to have the right climate conditions, to grow good-quality grapes. And the quality it’s already high. So, I often recommend English Sparkling wines.”

In Your Professional Opinion, Out Of Champagne And Prosecco, Which Do You Think Does A Better Job Of Complementing A Meal?

“Of course Champagne… Unfortunately, Prosecco doesn’t have structure to pair with the entire meal. Instead of Champagne which can pair with the meal. With Champagne, you never go wrong.”

What Advice Would You Give Aspiring Sommeliers?

“There isn’t a better job to travel around the world. Meet new people and know new stories. Opening a bottle of wine is to deliver an emotion to the guest. If you like all this, continue to learn and discover the beauty of this job.”

If You Sat Down For A Quiet Dinner, What Dish And Sparkling Wine Would You Choose To Enjoy Together?

“I will go for a very well-made Risotto (you can choose the flavours). With a bottle of Pol Roger Winston Churchill… Cheers!”
