Interview With A Sommelier Jefferson Goldring

The World of Wine is beautifully showcased by an army of talented Sommeliers, who help the consumer discover their next favourite bottle, understand the different regions and pair a delicious meal with the right Glass of Bubbly.

In this feature, I speak with a man from, England, who has helped many people to discover the vast world of Wines and Sparkling Wines, his name is Jefferson Goldring, let’s find out about his life as a Sommelier.

Tell Us About Yourself

“My name is Jefferson and I’m originally from Manchester, but now working at the wonderful Lyles in Shoreditch, London. I have been working in hospitality in some form or other for 14 years, with 9 years specifically in the world of wine. I have had the pleasure of working in some fantastic restaurants across the world with over 6 years spent in Scandinavia.”

Do You Remember Your First Experience With Sparkling Wine? When It Was And What Kind Of Wine It Was?

“If memory serves correctly my first sparkling wine would have actually been Prosecco! No doubt at a celebration of some sort.”

What Inspired You To Become a Sommelier?

“It is a fascinating job that constantly challenges with so much to learn and read about. I have really enjoyed a lot of aspects of the job from the therapeutic polishing of glasses, all the way to sharing the history and hard work that goes into producing a bottle of wine.”

During Your Time As A Sommelier, What’s The Most Surprising & Interesting Thing You’ve Learnt?

“Maybe one of the surprising things I learnt was that the Romans would put a lot of flavourings into their wines, including honey, different spices, seawater(!) and even ageing the wine in a smoke room too!”

What Sparkling Wine Producing Countries or Regions Hold A Special Place In Your Heart?

“Champagne will always rule the roost in this category and in my heart, a particular highlight are the wines and producers of the Aube. Besides the obvious, I have also really been enjoying German Sekt and also some Californian fizz. English sparkling is also coming on leaps and bounds as well of course.”

What Advice Would You Give Inspiring Sommeliers?

“Read plenty, taste even more and to always be open to trying new things.”

Where’s The Most Memorable Place You’ve Enjoyed A Glass of Bubbly?

“I would have to say actually one of my previous restaurants that I worked at, Restaurant Under in Norway. A underwater restaurant in the south of the country with a fantastic panoramic view of the sea 5.5 metres below.”
