The Sparkling Wine – Ferrari Trento

The creation of Ferrari Trento is all down to the highly regarded Giulio Ferrari, who started his journey back in 1902, he started creating his extraordinary vineyard/winery in the divine Trento city in Italy that then started creating unforgettable Sparkling Wines. Giulio wanted to be able to turn the area of Trentino into a place capable of competing with the finest French Champagnes and I think it’s safe to say that his dream became a reality.

Interesting Fact – Giulio knew the area of Trentino was a good location to plant vines, so after choosing the location he had the challenge of picking the vines he wanted to plant, he went for Chardonnay and ended up becoming the first person to make substantial plantings of Chardonnay in Italy.

Ferrari Trento – Maximum Blanc de Blancs – Tasting Notes

Aroma – “Crisp green apples, orchard fruits, minerals, chalky, with yellow fruits, honeysuckle, yellow rose petals and wild yellow floral on the aroma, if you leave it in the glass for a few minutes, it’ll start to open up with rising oaky character, toast and smoked meat.”

Flavour – “Delicate green apples, fresh green apple skins, with minerals, wet stones, chalky, almost saline, with ripe juicy yellow fruits, yellow rose petals and yellow floral notes on the palate, the palate gets richer after a while in the glass, almost like golden honey, hints of oak chips and charred oak.”

The Rum – Cinnabar

Crafted by Portsmouth Distillery Co, we have their exceptional 3-year-old Rum, aged in Bourbon casks, less than 100 metres from the sea in Fort Cumberland.

I reached out to a member of the team, Dich Oatley, their Sales Director, to ask him a couple of questions. What Is The Connection With Fort Cumberland And Portsmouth Distillery?

“Fort Cumberland is our home. It is all about our branding and back story (hence the label). The main three botanicals for our Fort Gin grow within the wall of the Fort – gorse flower, elderflower and sea radish. With the naval heritage of the site and the two co-founders being ex-Navy of 24 and 26 years respectively, the link is unmistakable.

As the walls of the Fort at 6-8 foot thick and with 8-10 feet of soil on the roof, makes it a perfect place to be aging Rum in casks, as the temperature and humidity of the aging rooms are constant all year round no matter what the weather.” – Dich Oatley, Sales Director

Portsmouth Distillery Co – Cinnabar Rum – Tasting Notes

Aroma – “Sweet spices of cinnamon, nutmeg, cloves and cardamom, with sweet vanilla on the aroma.”

Flavour – “Sweet spices once more greet you, with cinnamon, nutmeg and cloves along with gingerbread, vanilla and a little orange in the background.”

Named after the Cinnabar moth which also calls Fort Cumberland home.

What Inspired Your Label Design?

“The shape of the label is the exact shape of our home at the ancient monument that is 18th Century Fort Cumberland, surrounded by the sea and centuries of naval history. The 3-year-old Rum is called ‘1812’ because that is the year that our home Fort Cumberland was completed.” – Dich Oatley, Sales Director

Ingredients

  • Sparkling Wine
  • Rum
  • Vanilla
  • Cloves
  • Cinnamon
  • Ginger

How To Make The Maximum Cocktail

  • Pour in 15mls of Rum
  • A Drop of Vanilla Extract
  • Add a Small Sprinkling of Cinnamon
  • A Small Sprinkling of Ginger
  • Pour in 75mls of Sparkling Wine
  • Drop in 5 Cloves

Maximum Cocktail Tasting Notes

Aroma – “Rich cloves initially, with ginger and cinnamon coming through, along with sweet vanilla pastry on the aroma.”

Flavour – “Smooth, cream textured, exciting on the palate, with sweet vanilla pastries, sprinkled with a light helping of cinnamon and ginger, the cloves draw in the flavours of crisp green apples and zesty oranges, a joy-filled experience filled with exciting characters in play.”
