The Classic Champagne Cocktail

This simple and classic cocktail is perfect for special occasions and guaranteed to go down a treat.

A similar recipe for this cocktail appears as early as “Professor” Jerry Thomas’ Bon Vivant’s Companion in 1862 and has been seen several times in works of fiction, including Casablanca (1924).

  • 1 white sugar cube

  • 3 dashes of angostura bitters

  • 25ml cognac

  • Around 100ml Champagne, or enough to fill the glass

1. Put the sugar cube in the glass and add the 3 drops of bitters over it.

2. Add the cognac.

3. Gently top up with Champagne, and serve. Feel free to add a strawberry, cherry or orange peel for a little extra colour and style.
