Although the dish looks like a simple one, it is a dish packed with flavour, it will require a Sparkling Wine that is capable of working with the Tomato & Basil Salad, so I picked a Silver Medal Winner in the Summer Days Category, as this salad is one to enjoy when the sun is shining.

Simonic – Semiska Penina Brut

The story of Penine Simonič begins in the late 1990s, where Ivan Simonič decided to focus on making Sparkling Wine, he became the first Sparkling Wine producer in Bela Krajina, the first bottle of Semiška Penina was created in 2000.

  • Tomatoes
  • Basil
  • Balsamic Vinegar
  • Olive Oil
  • Salt
  • Pepper

How To Make This Tomato and Basil Salad

  1. Chop up the Tomatoes into small slices.
  2. Take all of the ingredients (a few splashes and pinches) and mix them around in a bowl.
  3. Then add a couple more Basil leaves on top of the dish.

The Pairing

Tasting Notes “The Sparkling Wine mellows out the dish, adding yellow fruits and a touch of yellow citrus to the combination, it enriches the Sparkling Wine flavours, the wine comes in strong initially, but the flavours from the plate rise back up leading to a perfect combination.”

A very tasty dish and an enjoyable Sparkling Wine, a nice light lunch to eat on a sunny day.
