When searching for buried treasure, you look high and low, to discover this splendid wonder, you’ll need to look no further than under a palm tree, taking aspects of the sea, the tropical and the traditional, Glass of Bubbly and Green Island bring you the Under The Palm Cocktail.

Vina Colja – Carmi Penina

Located in the Braniška Valley, right next to the main road Sežana – Nova Gorica, in the hamlet of Steske. The oldest surviving written record of their activity dates back to 1908 when Nono Franc became a member of the Wine and Fruit Society in what was then Rihemberg, now Branik, then at the end of the 1980s, they decided to devote themselves solely to viticulture.

The Sparkling Wines produced at Vina Colj are made in the classic method from Malvazija, Chardonnay, and Yellow Muscat grapes, the vineyards Colja are perfectly placed on the sunny slopes of the Braniška Valley.

In 1999, they constructed a new, modern stone wine cellar, and they also have a tasting room capable of hosting 50 people, you can book to journey on a guided tour of the cellar and tasting afterwards.

Aroma – “Creamy white fruits, candy yellow citrus, white floral and blossom display to experience.”

Flavour – “Creamy/mossy display of smooth ripe fruits, mushy white pears, white fruits, orchard fruits, yellow pears, and more to discover.”

The Rum – Green Island

This Green Island Superior Light Rum was crafted in the Republic of Mauritius, a country to the right of Madagascar which is next to the continent of Africa, with a total land area of 2,040 km², the environment in Mauritius is tropical on the coastal regions with forests in the mountainous areas.

The estimated population is around 1,265,000, with the language being Creole, but it is also an English-speaking and French-speaking nation.

Mauritius was first discovered by the Arabs back in the 16th Century, but they decided it wasn’t for them, the island was then discovered by the Portuguese in 1507, but it didn’t meet their requirements, so they sailed past. It wouldn’t be until 1598, when the Dutch discovered the island, that they settled down. They were the ones who started the first sugar production, bringing the plant from South East Asia and labourers from Africa.

Fast forward to the present day, there are 6 distilleries on the island, with a larger number of local bottlers/blenders. All helping with the success and discovery of Mauritian rums since the early 2000s, their rums are produced locally and now exported worldwide.

Green Island Superior Light Rum – Tasting Notes – “Elegantly smooth with sweet coconut, green herbs, freshly cut grass, fennel, sugar cane and more.”

This rum has been around since 1960 and to this day remains in the same distinctive packaging.

Ingredients

  • Green Island Superior Light Rum
  • Sparkling Wine
  • Vanilla Extract
  • Seaweed/Nori Sheets

How To Make The Under The Palm Cocktail

  1. Wet some pieces of Seaweed/Nori Sheets and spread them around the outside of your glass.
  2. Pour in 15mls of Green Island Superior Light Rum
  3. 100mls/top-up of Sparkling Wine
  4. Add 2 drops of Vanilla Extract

Tasting Notes

Aroma – “Real fresh seaweed with sweet vanilla, creamy white fruits, vibrant sea air and floral notes, very expressive and a joy to experience.”

Flavour – “A soft salty sea spray touch, with seaweed, ripe juicy white fruits, white pears, sweet vanilla and notes of wild florals in the breeze.”
