Rosé Champagne and Chocolate

We’ve paired Champagne with Chocolate and Prosecco with Chocolate before, but never with Rosé Champagne, so I’m looking forward to the red fruit flavours that will be hopefully added to the Chocolate.
After our 50 Shades of Rosé Tasting, where Fox & Fox Mosaic Rosé Brut 2015 won first place, we put aside and paired three Rosé Champagnes with some Dark Chocolate to see the results.
The Chocolate we are using is from Conscious, it is dark chocolate made in England, and it is organic raw chocolate, 100% pure dark.
The Chocolate bar is as follows:

Champagne Moutardier
We recently visited their winery in July and were given a tour, we were also taken up to a picnic table overlooking their vineyards to taste their range of Champagnes, including this Rosé.
Champagne Moutardier Tasting Notes
Aroma – “Brioche and red berry fruits on the aroma.”
Flavour – “Sweet creamy red berry fruits, candy like on the palate.”
Rosé & Chocolate Pairing Notes – “Delicate and ripe red berry fruits, almost like a sweet candy addition, but only lasts for half of the tasting experience.”

Aroma – “Smoky, savoury and red berry fruits on the aroma.”
Flavour – “Smooth and delicate red berry fruit flavours that get more expressive the longer they are in the mouth, but without being aggressive.”
Rosé & Chocolate Pairing Notes – “A longer combination of red fruits and chocolate, filled with fizz.”

Aroma – “Creamy, almost like a raspberry cheesecake on the aroma.”
Flavour – “A powerful punch of red berries on the palate that then fades down into a creamy ending.”
Rosé & Chocolate Pairing Notes – “A lighter touch of red berries on the palate still performing well with the Chocolate.”
All three Rosé Champagnes pair well with this 100% dark chocolate, they all add a version of red fruits, making the Chocolate more enjoyable, but still keeping the fundamental qualities of the Chocolate.
The Chocolate is a good example of what it is, a 100% dark chocolate bar, but for me, I prefer a sweeter treat.
