King of the Castle Cocktail

Combining the King of Cantina Rotaliana with the Castle of Hensol Castle, then we’ve got ourselves a powerhouse of characters, so why not craft a cocktail that tells the same story?
Let’s gift our new king of the castle a brand new and original Glass of Bubbly Cocktail, drawing on the flavours of the sea and the wild homegrown berries, fruits and herbs from around the castle.
The Sparkling Wine – Cantina Rotaliana
Located in Northern Italy, at the foot of the breathtaking Dolomites, near the renowned Garda Lake and the city of Trento, Cantina Rotaliana has over 80 years of experience in creating great tasting Wines and Sparkling Wines.
The winery is called Cantina Rotaliana because of a merger back in 1968, when the winery was first created in 1931, it was called Cantina Cooperativa di Mezzolombardo, the winery would then join forces with another winery, Società Enologica Rotaliana, to create the name we know today, Cantina Rotaliana di Mezzolombardo.
Their current head office was built in 2011, with modern production and storage areas along with stunning wine cellars and great marketing areas, even adding tasting and meeting rooms, the space accumulated is over 5000 square meters, all this makes them a fiercely competitive and dedicated wine-producer, able to respond to the challenges of growing global markets.

Aroma – “Soft zesty orange, orange blossom, blood orange, ripe peach skin and apricots with a hint of pastry notes on the aroma.”
Flavour – “Orange skin, blood orange, orange blossom, orange floral, redcurrants, raspberries, herbal characters and a touch more to discover on the palate.”

The Gin – Hensol Castle
Just outside Cardiff you’ll find South Wales’ first full scale gin distillery, visitor experience, gin school and contract bottling plant, all distilling nicely in the cellars of the 17th century Hensol Castle.
We’re exploring a Gin from their Hensol Castle Gin collection, with each bottle being handcrafted in Wales, being distilled in the cellars of the 17th century castle, Hensol Castle and then shipped out across the United Kingdom.
Hensol Castle Gin – Welsh Dry – Tasting Notes – “Zesty with herbal and floral characters, freshly peeled lemon and orange zest, gooseberry, with freshly grown garden herbs and a wide array of wild floral notes.”
Cocktail – King of the Castle
Ingredients
- Sparkling Wine
- Gin
- Ground Ginger (Spice Rack)
- Sea Salt
- Persimmon
- Little Umbrella
How To Make The King of the Castle Cocktail
- Start with 15mls of Gin
- Top up with 75mls of Sparkling Wine
- Add one Twist of Sea Salt
- A Small Sprinkling of Ground Ginger
- Drop in Three Thyme Twigs
- Then Garnish with a few Slices of Persimmon through a Little Umbrella
King of the Castle Cocktail Tasting Notes
Aroma – “Fresh persimmon, freshly squeezed orange juice, a touch of the beach with the salty sea air, with subtle red berries, ginger and lovely herbal notes of thyme on the aroma.”
Flavour – “A silky bitterness, saline and zesty red berries, red berries at the beach, with hints of ginger, it edges towards something like a sponge cake soaked in alcohol at the close.”
Also, enjoy a slice of Persimmon with this cocktail, it will draw out more flavours from the cocktail, while at the same time adding extra sweetness to the persimmon.
