Henry Beckford, a freed slave who attended the world’s first anti-slavery congress, held in London in 1840, by invitation. An ardent abolitionist he was accepted into polite society and became a beacon of light emerging from a dark past. We’re crafting a couple of Glass of Bubbly Cocktails to honour his ventures in life with the aptly named Beckford’s Rum.

The Sparkling Wine – Sosolič
Covering 10 Hectares in the beautiful wine country of Slovenia, Vina Sosolič makes Red Wines, White Wines and one bottle of Sparkling Wine, they say their most well know wines all bear a similar name, ‘Virus’, they have three bottles in their range that share the name Virus, a bottle of Red Wine called Virus 3, a bottle of White Wine called Virus 5 and a bottle of Sparkling Wine called Virus 7, we’re tasting their Virus 7 and incorporating its Sea Breeze character into a Glass of Bubbly Cocktail.

Aroma – “Sea Breeze, saline, yellow stone fruits, yellow floral, subtle yellow citrus, lemon, with yellow apples, minerals and zesty chalky characters on the aroma.”
Flavour – “Salty sea air, Sea Breeze, saline, wet stones, yellow stone fruits, yellow floral yellow apples and minerals on the palate.”

The Rums – Beckford’s
Beckford’s Rum is based in Bath in the Southwest of England, they launched in 2019, with the first year being dedicated to them traveling to all four corners of the United Kingdom, showcasing their new creations, and it’s paying off, with Beckford’s Rum gaining a favourable fan base and a range to choose from, we’re including their White Pearl – Rum and Coconut and their Rum and Caramel in some brand new Cocktails, but first, what do they taste like?
White Pearl – Rum and Coconut – Tasting Notes – “Created with baby coconuts from the Caribbean, we’ll discover wonderful warming coconut flavours, in a silky smooth texture.”
Rum and Caramel – Tasting Notes – “Warm salted caramel wraps itself around you along with almond, molasses, and toffee characters.”

How To Make The Wild Coconut Cocktail
- 15mls of White Pearl – Rum and Coconut
- Top up with Sparkling Wine
- Garnish with a Bay Leaf
- Chopped & Dried Rosemary (Cocktail Spice Rack)
Wild Coconut Cocktail Tasting Notes
Aroma – “Like taking a step outside, natural bay leaves, rosemary and coconuts on the aroma.”
Flavour – “Smooth and warming, the dried rosemary explodes on the palate with herbal character, coconut domains with a warm blanket of rum and the Sparkling Wine is employed by the rum liqueur to aid with saline and sea breeze characters being added to the mix.”

- 20mls of Rum and Caramel
- Top up with Sparkling Wine
- Place Your Bowler Hat in as a Garnish

Aroma – “Warm salted caramel wraps itself around you, with added extra salty characters from the saline of the Sparkling Wine.
Flavour – “Taking the salted caramel to the max with saline, sea breeze and rich rum/molasses characters.”
