Park Farm Cheeses
For four generations, the Padfield family have been milking a herd of cows at Park Farm. It all began when Edward Ernest Padfield took on their 240 acres of Park Farm in August 1914. With the cheddar cheese being crafted by his wife in the building that adjoined the farmhouse.
Graham Padfield decided to start making cheese again in 1990, in the very same buildings in which his grandmother had made her Cheddar almost 80 years before.
The local Bath Cheese was well known in the 18th and 19th centuries. It was even recommended to Admiral Lord Nelson in a letter from his father, written shortly after Nelson’s victory at the Battle of Copenhagen.
To Admiral Nelson from his father, July 16th, 1801:
“My dear Horatio, – On Tuesday next I intend (God willing) to leave Bath and tho’ not very strong, yet, hope to reach Lothian on Thursday, as I must remain a few days in London, let me not interrupt any of your engagements.
Recollecting that Sir William and Lady Hamilton seemed gratified by the flavour of a cream cheese, I have taken the liberty of sending 2 or 3 cheeses of Bath manufacture.
I am my dear Son your most affectionate Edmund Nelson”
Bath Soft Cheese & Champagne – “Fizzy lemon sugar bursts through the creamy cheese with white floral and white rose petals added to the pairing. The pairing allows both Champagne and cheese to express themselves, with sweet apricot flesh and soft, milky, creamy savoury cheese.”
Bath Blue & Champagne – “A younger expression, the Champagne cuts through the strong blue with refreshing white floral characters. A nice delicate pairing, you can enjoy the fruity character from the Champagne, yet still have the savouriness from the cheese.”
Wyfe of Bath & Champagne – “The pairing complements, and draws a dryer taste sensation from the Champagne and elevates the silky, almost butterscotch flavour from the cheese, it gifts the cheese a creamier sensation.”
Wyfe of Bath Extra Mature & Champagne – “Cleanses the palate, showing a very subtle pineapple flavour from the Champagne, and then a relaxed savoury expression from the maturity of the cheese.”
The Merry Wyfe & Champagne – “The Champagne expresses itself initially and slowly the savoury characters of the cheese build.”
