The World of Wine is beautifully showcased by an army of talented Sommeliers, who help the consumer discover their next favourite bottle, understand the different regions and pair a delicious meal with the right Glass of Bubbly.

In this feature, I speak with a gentleman from England, who has helped many people to discover the vast world of Wines and Sparkling Wines, his name is Nikos Emner, let’s find out about his life as a Sommelier.

Tell Us About Yourself & How You Became Involved In The Hospitality Industry?

“I have always been passionate about creating positive experiences for others. My journey began when a friend of mine (Silas) asked me to join him at a family-run hotel (Elouda Palm Hotel) and help him go through the season.

While I was working there I got to learn more and more about wine. The most important part of my learning that drove me into wine was the sensory evaluation.

I was so excited to be able to tell so many things by smelling/tasting the wine that from that moment I was committed to getting to know as much as possible regarding wine and the industry around it.

I decided to pursue an education in wine and I decided to join a wine school in Greece and followed this with CMs and WSET both in London.

What I love most about the hospitality industry is the opportunity to make a real difference in people’s lives, whether by ensuring a comfortable stay for guests or creating memorable events. My experiences have taught me the importance of attention to detail, teamwork, and adaptability. I thrive on the dynamic nature of the industry and am always looking for new ways to improve the guest experience and drive business success.”

Do You Remember Your First Experience With Sparkling Wine? When It Was And What Kind Of Wine It Was?

“My first true encounter with sparkling wine was from Greece Amalia Rosé from Tselepos Estate an indeed fascinating choice for a memorable introduction.

Amalia Rosé is a pale-rose sparkling wine made from the Agiorgitiko grape, using the traditional method. This wine is known for its elegant color, delicate bubbles, and refreshing notes of red berries and floral hints. The traditional method, similar to that used in Champagne, gives it a refined and complex character. Try pairing Amalia Rosé with lobster rolls.”

During Your Time As The Assistant Director Of Wine At The Mandarin Oriental Hotel Group, What’s The Most Interesting Thing You’ve Learnt?

“As the Assistant Director of Wine at the Mandarin Oriental Hotel Group, one of the most interesting things I learned is the delicate balance between providing a unique guest experience and understanding the business aspects of wine management. This role offered a profound insight into both the art of hospitality and the science of financial sustainability.

Important keys that I learnt were, Guest Experience and Personalization, Cost Control, Revenue Generation, Market Trends and Guest Preferences, Balancing Quality and Profitability and most important Team Training and Development.”

What Sparkling Wine Producing Countries or Regions Hold A Special Place In Your Heart?

“Champagne undoubtedly holds a special place in the hearts of many sparkling wine enthusiasts. Its rich history, unparalleled craftsmanship, and association with celebration make it a perennial favourite. I had shared many special moments with a glass of Champagne.

While I love Champagne, I find myself flirting with English sparkling wines. The cool climate and chalky soils of southern England, particularly in counties like Sussex, Kent, and Hampshire, are remarkably like those of Champagne. This has allowed English winemakers to produce sparkling wines that rival their French counterparts in quality and character. The growth of this industry in England is exciting and reflects a dynamic evolution in the world of sparkling wines.  I have already visited many wineries here and I really admire their work.”

Where’s The Most Memorable Place You’ve Enjoyed A Glass of Bubbly?

“Two summers ago, I was at Adelsheim vineyards, David was hosting a dinner at his terrace alongside many other winemakers from Oregon. I got a glass of Gran Morain Brut Rose and I went outside, looking at the vineyards while the sun was setting, it was so beautiful and peaceful. Moments like these, where exceptional wine meets beautiful scenery and heartfelt stories, are what make enjoying sparkling wine so special. They remind us that wine is not just a drink, but a vessel for memories, emotions, and the celebration of life’s simple yet profound pleasures.”
