In this feature, we speak with Douwe Steyn, Head Sommelier at Michelin-starred Cycene in London, who is currently helping many wonderful people to discover the vast world of Champagne and Sparkling Wines. Let’s find out about her incredible life in the world of wine.
Please Tell Us About Yourself & What Inspired You To Become a Sommelier?
I am a fun-loving food and wine obsessive. I trained as a chef and, while working in the Cape winelands, got curious about wines and the making process. I guess it started there with a real love for food, wine and how it can bring people together.
Do You Remember Your First Experience Of Tasting Sparkling Wine? Could You Tell Us More About It And What Kind Of Sparkling Wine It Was?
I do, thankfully, it was a good quality sparkling wine from Graham Beck, still made by Pieter Ferreira, who is making world-class sparkling in the Cape.
During Your Time As A Sommelier, What’s The Most Surprising And Interesting Thing You’ve Learnt?
I have learned that it is important to remain inquisitive and curious about everything. When it comes to wine specifically, there is a lot of smoke on mirrors and faff surrounding the wine world. It is crucial to take yourself out of your comfort zone.
What Sparkling Wine Producing Countries or Regions Hold A Special Place In Your Heart?
France, as always and Champagne, the birthplace. However also have a soft spot for Burgundy and Jura. Some amazing Cremants coming out of Jura.
Can you tell us more about the Wine List at Cycene?
The list at Cycene reflects many of the values shared with the food producers we use in the kitchen. Telling a story of storied artisanal producers who farm sensibly and make wine honestly. It features some Cult natural Producers along with some great classic producers from around Europe and beyond. We offer a full British wine pairing along with the menu and a great selection of brilliant wines from the British Isles, from Sparkling to Sweet.
What Advice Would You Give To Aspiring Sommeliers?
I would say, try as much as you can and stay curious. It is also really crucial to be confident in what you like and appreciate, as that is always your own.
Can You Share With Us One Of The Most Memorable Experiences You’ve Enjoyed With A Glass of Bubbly?
I have had so many. Many birthdays, weddings and real milestones have been clinked with a glass or five. Watching the sunset in Greece is definitely one of the best bubbly moments.
