A Taste Of Argentina

Let’s venture across the Atlantic into South America, to the beautiful country of Argentina, while over there we will be eating one of their national dishes and tasting one of their Sparkling Wines.
Today we are making Choripán with Chimichurri Sauce and pairing it with a bottle of Jasmine Monet’s Organic Brut Nature Sparkling Wine.
Choripán is an Argentine dish that consists of the Chorizo sausage that is made from pork, smoked paprika and garlic, and Chimichurri which is a sauce made from freshly chopped parsley, cilantro, oregano, garlic, red pepper flakes, vinegar and olive oil.
The Choripán dish was first created during the middle of the 19th century by South American cowboys called ‘gauchos’, they were found in the rural areas of Argentina. After a successful day, to celebrate they would grill asados, which is meat at its purest, after some time they would eventually place the meat inside some bread, creating the first Choripán.

The production at Jasmine Monet is chosen from several vineyards from the Gualtallary, Valle de Uco areas in Argentina, they choose the vineyards based on the climate and soil, to ensure the best quality grapes.

Pairing Notes – “The Sparkling Wine cleanses the palate, leaving the paprika from the sausage and notes of minerals and citrus from the Sparkling Wine, the doughy bread is completely removed from the equation, after the mid-length the sausage comes back with a hint of herbal notes.”
