The Cocktail that you’re about to make is one of Faizal Fazaldeen’s Signature Fizz Cocktails, which he makes at the Level 43 Sky Lounge in Dubai.

“I’ve been working in the beverage industry for over 4 years. I have a diploma in hotel management, which has offered me operational knowledge and experience. The Bartender from Sri Lanka specialises in Cocktail preparation and creation. He also possesses experience working with craft beer, wine, spirits and Cocktails, as well as knowing their optimal food pairings. What was the inspiration behind Passion Sparkle and when did you first make it?

“I made this cocktail last year, I like it because I experimented with lots of cocktails to make this perfect taste and balanced cocktail. I first made this homemade Passion Syrup for myself. If I make it with monin puree it spoils all taste in this cocktail.”

“You can use any sparkling wine, I tasted this cocktail with different types of wine but the brand doesn’t make a big difference.”

The Recipe for Passion Sparkle

Ingredients

• Home-made Passion Syrup
• Passoã Liqueur
• Lemon Juice
• Simple Syrup
• Sparkling Wine

How To Make Home-Made Passion Syrup

• Pour in 1 cup of Demerara Sugar
• 1 cup of Freshly Squeezed Passion Fruit
• 1 and a half of Water
• Boil until thick

How To Make The Passion Sparkle Cocktail

• Fill your glass with Crushed Ice
• Pour in 30mls of Passion Syrup
• 2 Spoons of Fresh Passion Fruit with Seeds included
• Pour in 30mls of Passoã Liqueur
• 30mls of Lemon Juice
• 7.5mls of Simple Syrup
• Top up with 120mls of Sparkling Wine
• Then Garnish with a slice of Passion Fruit
