Sublime Butter Pairing

Spending time over the Christmas season cooking and baking some delicious festive treats with a Glass of Bubbly in hand, is one of the things we look forward to the most, from Christmas Cookies to making our own pigs in blankets, beef Yorkshire puddings or experimenting with something new, and when in the kitchen, the delicious taste of butter is always near, so discovering Sublime Butter and its luxury ‘great taste’ flavoured butter was a treat.

We know customers of Dairy products around the world are concerned about ‘Bovaer‘, which is being used in Dairy Cows across the country, with ‘Arla’ being one of the biggest brands in the UK trialling it. The FDA has stated ‘Not for human use’ and that Bovaer ‘may damage male fertility and reproductive organs’, so it was great to discover Sublime Butter’s clear statement of them ‘not’ using it, which you can read below:

“There’s growing concern amongst consumers about Bovaer, a methane-reducing additive that some European dairies are trialling in their cow feed. We wanted to take a moment to offer some reassurance. Sublime’s dairy farm does not and has never used Bovaer or any other methane-reducing additives — nor does it have any future plans to do so.”Sublime Butter

Now it’s time to discover how delicious Sublime Butter is. We’re going to bring one of their gorgeous looking recipes to life using one of their flavoured butter and match it with an award winning Glass of Bubbly.

Flavoured butter is a growing product, in fact, it’s a category that is growing every day, but it was actually Sublime that created the category around seven years ago, with them receiving the Dairy Innovation Award for doing so!

I first discovered flavoured butter back in 2023 while enjoying dinner at Restaurant Locanda Margon, by Ferrari Trento in the TrentoDOC region in Italy, Ferrari Trento has been the official toast of F1 for the past 4 years and produces world class Traditional Method Italian Sparkling Wines.

Flavoured Butter at Restaurant Locanda Margon in the TrentoDOC Region in Italy

We sat down at a large table, were served a glass of Ferrari, and enjoyed a whole host of mini courses, crafted to perfect, but first, we had a little bread and flavoured butter to try, this was my first experience with flavoured butter, that I had first thought they were small delicate sweet treats. Flavoured Butter is something I’ve only ever experienced in fine and luxury locations. From my point of view, flavoured butter is a luxury product, but it doesn’t come with that kind of luxury price tag, it’s still affordable.

Each one of Sublime Butter’s award-winning flavours is made with just cream (from grass-fed British dairy) and salt. No unpronounceable stabilisers, fillers or E numbers. From there, they develop tantalising flavours for every culinary need, with a great level of quality that is used by some of the best chefs around the UK.

Currently, they offer a wide selection of the following flavoured butter available to try:

  • No. 1 — Pink Himalayan Salt
  • No. 5 — Garlic & Herb
  • No. 6 — Garlic, Rosemary & Mint
  • No. 8 — Red Chilli, Smoked Salt & Lime
  • No. 11 — Lemon, Caper & Dill
  • No. 12 — Truffle, Parmesan & Black Pepper
  • No. 17 — Chimichurri
  • No. 19 — Béarnaise
  • No. 55 — British Isles Lobster, Devon Crab, Sicilian Lemon, Caviar & Fennel
  • No. 100 — Barbary Duck, Morello Cherry & 100-Year-Old Grand Marnier

Looking through Sublime’s recipes, you’ll discover anything from Roast Chicken, to an English Breakfast, to Pancake and Shortbread. We decided to take inspiration from their ‘Whole Roasted Sea Bass’ recipe.

“The quality of the butter is provided with every mouthful, elevating different flavours of the dish. When combined with the bubbly elegance of Champagne or English Sparkling Wine, you’ll experience a delightful creamier sensation, enriching the flavour profiles, mellowing out the fizzing bubbles and blending wonderfully. The addition of the DOCG Prosecco adds an additional layer of fresh fruity characters.”

Silverhand Estate – KYNG – England

Welcome to Silverhand Estate, where the Future is Sparkling. Their KYNG 2018 vintage label took home a Gold Medal in the Pastries Delight category. Silverhand is located in Luddesdown, Kent.

The name of their winery, ‘Silverhand’ takes its name from King Ludd – a first century King of the Trinovantes, founder of London and God of Protection and Prosperity. The story is told that after losing his hand in battle, he was stripped of his rank and position until a Silverhand was made for him…

In more recent years, Silverhand has established the largest single vineyard in the UK, spanning the beautiful countryside in the heart of Kent, covering an area of more than 600 acres, and the whole vineyard is managed organically.

Domaine Alexandre Bonnet – Les Contrées Rosé – France

With a mighty fine selection of Champagnes to choose from, including a Trophy winning 7 Cépages, their Les Contrées Rosé took home a Silver Medal in the very relaxing category of ‘Meditation’, getting the chance to speak with the President of Champagne Alexandre Bonnet – Arnaud Fabre, I got to ask him a few questions, including finding out about his role as the President and how his journey into the Champagne industry all began:

“A President does nothing.. and everything at the same time! The actual role of a President is to give a vision to the company and ensure it is shared among the team so as to harness their efforts towards success. It’s also my role to represent the Domaine to the customers and the media.

I don’t deserve any credit as I was born into a wine family, winegrowers from the Medoc and the Languedoc. Then I figured out a new trend was emerging in Champagne towards terroir wines that’s why I joined Alexandre Bonnet with the vision to reveal this outstanding, exceptional Cru of Les Riceys in the Côte des Bar, the #wildchampagne.” – Arnaud Fabre – President of Champagne Alexandre Bonnet

Bianchin – Asolo Docg Prosecco Superiore Extra Brut Millesimato 2023 – Italy

Taking home a Silver medal in the First Date category at the Glass of Bubbly Awards this year, the grapes used within this bottle were grown on the Vineyards of Bianchin, which are located in the heart of Montello, where nature and memories unite, shining light on a glorious past for the Bianchin family.

Responsible for the production of their Asolo Prosecco DOCG, the family takes great care in nurturing the vines, with the hope that the terroir of the land is captured within the fruit and that it speaks its greatness and shares its secrets in nobility and its richness in spirit.
