Candover Brook – Brut

Nestled within the 2,000-acre Preston Farm in Hampshire’s Candover Valley, the Candover Brook vineyard epitomises the conservation-driven ethos of Mark and Julian Sainsbury and their family estate.

The brothers champion regenerative farming practices to enhance soil carbon sequestration, biodiversity, and the preservation of ancient woodlands, achieving carbon neutrality and securing higher tier Countryside Stewardship and LEAF certification.

The chalk stream that runs through the valley, Candover Brook, is home to the rare English white-clawed crayfish, both of which are celebrated in the design of the wine’s label.

The vineyard is comprised of five hectares of Chardonnay, Pinot Noir and Pinot Meunier. They hand-harvest their grapes and rely on many biodynamic techniques while respecting the traditional champenoise methods. The wine undergoes 100% malolactic fermentation. After bottling, the wines are aged on lees for a minimum of 36 months for their brut and 27 months for their rosé. Their Brut won a Silver Medal in the Zesty & Zingy Category at the Glass of Bubbly Awards 2024.
