Dunesforde – Interview With Hayley Pullan

There is no denying that English Sparkling Wine is on the rise, becoming an undeniable contender to Traditional Method Sparkling Wines around the world. To the English, it’s becoming a fan favourite and a go-to Glass of Bubbly, its quality is improving year on year and thanks to innovators and those willing to follow their dreams, the choice of English Sparkling Wine is expanding.

In this exclusive feature we speak with Hayley Pullan, the Sommelier at Dunesforde, in England, let’s find out a little about her life in the English wine industry.

It’s Great To Speak With You, Hayley, Can You Tell Us A Little About Yourself & How Your Journey Into The Wine Industry Began?

“I have always worked in the food industry, at Michelin-starred restaurants and premium hotels, and, as my career progressed, my knowledge of wine had to improve.

It was then I discovered I actually found wine more interesting than food. I loved the science and the “whys?” around wine. Why does a particular climate or setting affect the growth? Why that grape? Why that fermentation process?”

Do You Remember Your First Experience With Sparkling Wine? When It Was And What Kind Of Label It Was?

“I don’t remember exactly as I would have been young. I was often allowed to try my parents’ wine and I remember hating it! I didn’t like how the fizz would make my nose tingle. I was always told I would like it when I was older. I would reply with “never”! Hahaha, how wrong I was!”

When It Comes To Pairing Your Sparkling Wine With Food, Do You Have Any Favourite Combinations That You Would Personally Recommend?

“One of my current favourite pairings is our Dunesforde Sparkling Rosé with chargrilled peach and Parma ham. Our sparkling rosé has flavours of peach and apple however still has a rich flavour which goes beautifully with the richness of the Parma ham.”

If You Could Choose A Person In The World, Past Or Present, To Have A Glass of Bubbly With; Who Would It Be And Why? What Would You Drink And Why? What Would You Discuss?

“David Tennant without a doubt. I was a huge Dr Who fan growing up and have definitely developed a little (or Big) crush on him over time. It’s just a shame he is older than my mum! He has been in many TV and stage shows and I imagine he would be very interesting to talk to. We would drink a bottle of Dunesforde Sparkling Solaris. It is my favourite of the sparkling wines we produce as it is light and floral – very easy drinking.”

Can You Share With Us Some Of The Countries And Locations Around The World That You Can Enjoy A Glass Of Dunesforde?

“Our vineyard was only planted in 2016 so we are still quite young. Our wines are listed in various fine dining restaurants and hotels in the north and we also deliver across the UK but who knows what will happen in the future. Nothing beats a glass of sparkling on our terrace overlooking the vines though!”

What Future Plans Can Enthusiasts Of Dunesforde Look Forward To In The Coming Years?

“We have recently won some amazing awards – firsts for Yorkshire – putting us side by side with some of the greatest producers in the country. We want to continue to produce more premium, high quality English wines and hopefully see Dunesforde enjoyed in on-trade venues all over the country.

Not only do we make fabulous award-winning wines, but we are also a beautiful venue. Due to its popularity, our Christmas Fair is now happening twice this year and, after its huge success last year, our food and wine fair is back next April. We are becoming known as a great venue for corporate events and private parties too.”

Can You Share With Us One Of The Most Memorable Experiences You’ve Enjoyed With A Glass of Bubbly?

“My graduation. I never thought I would go to uni; I was not an academic while at school. So, it was a shock to us all, including me, that not only did I graduate but I actually did well! I chose a bottle of our Queen of the North Classic Cuvée and it was amazing to pop the cork for the first time to celebrate something I have achieved.”
