Ethereal Champagne

Champagne comes in all shapes and sizes from big and powerful to light and bright. The latter is very much the style of Champagne F. Cossy, currently under the design of winemaker Sophie Cossy. Sophie was awarded 2016 Winemaker of the Year in Champagne, and thus, no longer under the radar. However, about ten years ago, at age 25, some questioned her ability to run the family estate. She proved them wrong and she took over Champagne F. Cossy after her father’s sudden death with her mother, Geneviève. Their ultimate goal was & still is to produce Champagne with elegance and finesse.
The family estate dates back to 1764 where grapes were sold to negotiants prior to the start of their estate bottling in the 1960’s. The estate’s holdings are 25 acres in total within the two adjoining villages of Jouy-lès-Reims and Pargny-lès-Reims that are just minutes outside of Reims.
One Champagne to look out for is Sophie’s first Blanc de Blancs, the Champagne F. Cossy 2010 L’Instant, Blanc de Blancs, Brut Nature is 100% Chardonnay. There were only 125 cases produced. Although there is zero dosage the fruit is rich and with notes of biscuits and brioche it pairs wonderfully with Quiche Lorraine and its buttery crust.
