Tell Us About Yourself
“My name’s Alessio, 30 years old, from Italy. I work as a Senior Sommelier at Hakkasan Mayfair. I undertook this beautiful career in 2018.”
What Inspired You To Become a Sommelier?
“I remember that once I went out with some friends, and I saw a few sommeliers working in a restaurant in London…and I said to myself: “I want to be there!”
During Your Time As A Sommelier, What’s The Most Surprising Thing You’ve Learnt?
“I’ve learnt that you shouldn’t have any bias against other people, whether they are drinking inexpensive wine, putting ice cubes into a glass of blush or drinking ice-cold Champagne…”
How Often Do You Find Yourself Recommending English Sparkling Wine?
“I sometimes deal with English Sparkling Wine… Hopefully, more and more people have started to be fond of English Wine.”
In Your Professional Opinion, Out Of Champagne And Prosecco, Which Do You Think Does A Better Job With Complementing A Meal?
“Surely Champagne, because of its complexity, acidity and bubbles.”
What Advice Would You Give Aspiring Sommeliers?
“If you like drinking wine, don’t be shy, go for it, it doesn’t have to be your job. You can do that as a hobby too. Go for wine tastings, read, listen to people talking about wine, be humble and curious, there will always be something you don’t know about.”
If You Sat Down For A Quiet Dinner, What Dish And Sparkling Wine Would You Choose To Enjoy Together?
“Deep fried eel with a glass of Franciacorta…”
Thank you, Alessio, for sharing your words, knowledge and experiences with us and we at Glass of Bubbly wish you the very best for the future!
