The World of Wine is beautifully showcased by an army of talented Sommeliers who help the consumer discover their next favourite bottle, understand the different regions and pair a delicious meal with the right Glass of Bubbly.
In this article, I speak with a man who has helped many people to discover the vast world of Wines and Sparkling Wines, his name is Nicola D’Ascenzo, let’s find out a bit about his life as a Sommelier.
Tell Us About Yourself
“My name is Nicola D’Ascenzo, I am from Italy and I work as a Sommelier at The London EDITION Hotel.”
What Inspired You To Become a Sommelier?
“I used to work as a Waiter in Italy and at the same time I was in charge of the wine service. So I started studying and tasting the wines on the list to provide the best service to the guests. From there I decided to go deeper and approach the AIS courses (Associazione Italiana Sommelier), WSET and Court of Master Sommeliers here in London.”
During Your Time As A Sommelier, What’s The Most Surprising Thing You’ve Learnt?
“Thinking outside the box. Hospitality is an art in continuous change, I think that innovation and trialling are factors to keep regularly trained.”
How Often Do You Find Yourself Recommending English Sparkling Wine?
“During the service it often happens, the quality of the product is definitely rising and the market is expanding with it, I am always happy to offer a glass of English Sparkling wine and share my opinions with those who have never heard of it.”
In Your Professional Opinion, Out Of Champagne And Prosecco, Which Do You Think Does A Better Job With Complementing A Meal?
“I would say Champagne, the traditional method gives to the wine the right complexity and finesse to sustain a meal, which is impossible for a tank method wine to reach. I would suggest to enjoy the fruitiness and simplicity of a glass of Prosecco as an aperitif.”
What Advice Would You Give Inspiring Sommeliers?
“The world of wine is immense and it is very easy to feel lost, especially at the beginning, so I suggest immediately to find a good team and mentors from which to learn the right knowledge and guide you in this new path. Studying, tasting constantly and staying humble are the main factors.”
If You Sat Down For A Quiet Dinner, What Dish And Sparkling Wine Would You Choose To Enjoy Together?
“I am a huge fan of Blanc de Blancs. A grilled turbot and Charles Heidsieck Blanc des Millenaires 2006 would be absolutely heaven.”
