Interview With A Sommelier – Sofia Crepaz

In this feature, we speak with Sofia Crepaz, the Head Sommelier at Trivet in London, who is currently helping many wonderful people to discover the vast world of Champagne and Sparkling Wines. Let’s find out about her incredible life in the world of wine.
Please Tell Us About Yourself & What Inspired You To Become a Sommelier?
I’ve worked in hospitality since I was 15, first as a waitress and later as a bartender. I was always around wine, but I didn’t think much of it at the time. That changed in 2015 when I spent a few months in Montalcino working for Fabio Tassi. Helping in the vineyard and in his wine shop made me realise how interesting wine really is. That experience stayed with me, and in 2017, I decided to become a sommelier.
Do You Remember Your First Experience Of Tasting Sparkling Wine? Could You Tell Us More About It And What Kind Of Sparkling Wine It Was?
My first sparkling wine experience goes back to my first year of hospitality school, when we learned how to open a bottle. Later that year, on New Year’s Eve, my friends and I bought a very cheap Prosecco with a plastic cork—probably the only thing we could afford. We struggled to open it, and since we didn’t think about glasses, we drank straight from the bottle. It definitely wasn’t a great wine, but it’s a funny memory.
During Your Time As A Sommelier, What’s The Most Surprising And Interesting Thing You’ve Learnt?
One thing that really surprised me is how well sparkling wines can age. I always thought ageing was mainly for reds or certain whites, but some sparkling wines develop amazing complexity over time. And honestly, the learning never stops in this job—there’s always something new to discover.
What Sparkling Wine Producing Countries or Regions Hold A Special Place In Your Heart?
Trento DOC is especially important to me. It produces excellent sparkling wines and still isn’t as well known as it deserves to be. I’m from that area, so I’m always happy to support and promote the wines from back home.
Can You Tell Us More About Trivet’s Impressive Wine Almanac?
Trivet’s wine list is unique because it’s organised chronologically, starting from the places where wine is believed to have first been made and moving forward in time through different regions and styles.
We put a lot of focus on producers and areas that people might not know yet, but that make genuinely exciting wines. At the same time, the list also includes well-known classic regions so guests can explore both the familiar and the unexpected.
The idea is to show the journey of wine across centuries and continents, and to encourage guests to discover something new while still having access to the great benchmarks. It’s a list built with curiosity, history, and a sense of adventure
What Advice Would You Give To Aspiring Sommeliers?
Go step by step. There’s a lot to learn, and it can feel overwhelming at first. Be patient, stay curious, and try to study a little bit regularly. Taste as much as you can and look up the wines you try. And remember, working in wine is not only about knowledge—it’s also about people and good hospitality.
Can You Share With Us One Of The Most Memorable Experiences You’ve Enjoyed With A Glass of Bubbly?
One memory that means a lot to me is my sister’s wedding. I organised the sparkling wine for the day—Ferrari Perlé—and as a special touch for the couple, I arranged a magnum of Giulio Ferrari engraved with their names and wedding date. Seeing them enjoy that moment made it very special for me, too.
Asked on Behalf of Champagne Collectors – What’s The Oldest Vintage Champagne You’ve Tasted?
The oldest Champagne I’ve tasted is a 1982 Dom Pérignon. It was incredibly fresh and complex, with beautiful brioche notes. I felt lucky to have the chance to taste something so well-preserved.
