Brut Blanc de Blancs
Traditional Method

Entirely chardonnay grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in this bottle and aged en tirage before degorgement.
Brut Blanc de Noir

Entirely Pinot Noir grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in this bottle and aged en tirage before degorgement.
Brut Traditional

A classic pinot noir dominated non-vintage blend sparkling wine. This mulit-vintage blend is produced from pinot noir and chardonnay grapes from the Leelanau Peninsula that are hand picked and carefully whole – cluster pressed.The juice is fermented in stainless steel, then fermented a second time in this bottle and aged en tirage before degorgement. Then finished with a Brut dosage of 1% residual sugar.

Sweet white

A blend of Riesling, Muscat and Traminette grapes that are carefully picked and pressed. The juice is fermented in stainless steel tanks, then fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, dosaged, and bottled.
