The Mermaid, whether a mythical character made famous by Disney and stories from the sea, or a real creature so rare that it only lives on in myths and legends, either way, it is a creature that will forever be in the minds of those young and with a questioning mind.
This Cocktail is dedicated to the Mermaid, made possible thanks to Isle of Wight Distillery’s Mermaid Gin and Bortolomiol’s Prosecco.
The Prosecco

This is a story of what can be accomplished when you’ve been given a legacy to guide you into the future, Giuliano Bortolomiol left his winery to his wife Ottavia and their daughters Maria Elena, Elvira, Luisa and Giuliana, who with a ‘natural’ instinct have not only maintained what their father built up but have also taken on new challenges to ensure the revolution does not come to an end.
The Bortolomiol family has a strong united bond, the mother is the soul and linchpin of the winery and the sisters are the beating heart who guide and support the business, achieving new levels of quality, efficiency and effectiveness with an outlook that is always competitive.

The Mermaid Gin
From the Isle of Wight Distillery, the wonderful Mermaid Gin was created.
The company was founded by Xavier Baker & Conrad Gauntlett in 2014, the Isle of Wight Distillery is the island’s first and only distillery and the home of Mermaid Gin.
Rooted in the natural landscape of the unique island, their small team distils spirits shaped and inspired by their stunning surroundings and the unique character of their island.
The name for their signature gin was inspired by its lead botanical rock samphire, known locally as ‘mermaid’s kiss’. This aromatic succulent clings to the cliffs surrounding the Island and marks the high tide line on its majestic beaches. Like the kiss of the mythical mermaid, saving sailors lost at sea, the rock samphire was a signal that shipwrecked sailors and smugglers were safe from the raging seas.

Ingredients
- Prosecco
- Mermaid Gin
- Elderflower Syrup
- Sea Salt
- Seaweed
- Rosemary
How To Make The Mermaid Cocktail
- 15mls of Gin
- 5-10mls of Elderflower Syrup
- 75mls of Prosecco
- A Twist or Sprinkle of Sea Salt
- Fill The Top With Seaweed Pieces
- Then Add A Sprinkle of Rosemary
Mermaid Cocktail Tasting Notes
Aroma – “A touch of the sea, seaweed, saline, salty sea air, sweet elderflower and wet stones greet you on the aroma.”
Flavour – “A saline character travels with you throughout, with delicate seaweed gracing the lips with their presence, a subtle sweetness from the elderflower syrup, and a gentle burst from the rosemary, the prosecco is drier in character, gifting wet stones, minerals and chalky characters.”
