Nature Green Cocktail

We’ve diving deep back into the wilderness, joining forces with nature to create the Nature Green Cocktail, utilising BIO Prosecco DOC from Villa Sandi and Dyfi Distillery’s Pollination Gin.
Using the wonderful creations from our own back gardens, local British companies and one of the most famous Prosecco houses, Villa Sandi, who’s dedicated to giving back to nature, a winner of the Sustainability Trophy by Slow Food.
Prosecco DOC BIO – Villa Sandi

Villa Sandi Prosecco Brut DOC Biological il Fresco – Tasting Notes
Aroma – “Green fruits, green apples, green pears, flow into a delicate green apple puree, homegrown garden herbs and apple blossom, plus an array of similar floral notes on the aroma.”
Flavour – “Soft, delicate, creamy green characters, freshly picked green apples, green apple skin, green apple flesh, green pears and homegrown garden herbs on the balanced palate.”

Dyfi Distillery – Gin
The Cameron brothers opened Dyfi Distillery in March 2016 after two years of intensive research and experimentation, it all began in 2016 when they started distilling in very small batches using two small 100-liter stills.
Let’s meet the Cameron brothers:
Pete Cameron: is a hill farmer, forager, and beekeeper. He has lived and worked in the Dyfi region for over 30 years.
Danny Cameron: is a highly experienced wine and spirits professional, and a regular wine judge.
Blending nature, science and family, for the Cameron brothers, sustainability not only means respecting our fragile environment (which in Dyfi is additionally protected by UNESCO), but also creating some world-class gins so that their small family business contributes to their local rural economy.

Ingredients
- Prosecco
- Gin
- Apple Purée
- Apple Skin
- Pressed Viola
- Ginger
- Cornflower Petals
- Dill Leaves
How To Make The Nature Green Cocktail
- Start with 15mls of Gin
- Add 100mls of Prosecco
- Drop in a Pinch of Ginger
- And a Handful of Cornflower Petals
- For the Garnish, Cut a Few Pieces of Apple Skin, Slide Them and a Couple of Pressed Viola Petals Through A Cocktail Stick
- Then Add A Piece of Dill and Place Upon The Rim of Your Glass
Nature Green Cocktail Tasting Notes
Aroma – “Red apple skin, gentle ginger, a bouquet of wild floral, displaying strong purple floral thanks to the cornflowers in the glass, beneath the bed of petals, you’ll discover soft botanicals, green apples, pears, foliage and creamy pear blossom and sweet puréed apples on the aroma.”
Flavour – “The palate is met with lively ginger, dried cornflowers and a delicate sweetness from the apple purée initially, then the Prosecco comes flooding through with foliage, green apples and pear juices, all freshly squeezed, then a delicate sweetness from the apple purée and from the Gin helps the Prosecco with adding an array of different floral and some blossom notes, from the wildflowers to the bouquet displayed in a vase at home.”
