Paul Déthune Blanc de Blancs & Blanc de Noirs

Our seven hectares of land, lovingly cultivated by Pierre Déthune, produce nine Grand Cru wines. Each of these undergoes malolactic fermentation and aging in the winery’s cellars, which which were cut out of the chalk in the 17th century. Blanc de Blancs Blend: 100% Chardonnay from Ambonnay Grand Cru. Made and aged in 205 liters champagne Oak barrels. Tasting: A gorgeous crystalline gold colour, with green highlights. An extremely fine bouquet, with apricot,grapefruit and peach aromas. Palate: This exceptionally fresh champagne will be an ideal companion for summermeals.Or just to be tasted with our Blanc de Noir for a tremendous tasting that will reflect all the differences only made with the difference of grapes as they are worked exactly the same way. This champagne should be enjoyed either as a cocktail with marinated salmon sushi or during a meal with scallops in the shell and chanterelle mushrooms.

Blanc de Noirs Blend: 100% Pinot Noir. Elaborated and aged in oak barrels, from one year harvest,following the oldest wine-making traditions of the Champagne Region ageing in 205l oak barrels from Champagne area. Tasting: A beautiful gold colour with hints of copper-the typical shade of Blanc de Noirs (white from Black)champagnes. Fine,slow bubbles. A warm bouquet,strong and well-built ,with aromas of vanilla (characteristic of wine aged in oak),crystallized fruit ,forest floor and a spicy note. The warmth and strength of Pinot Noir immediately delight the palate,mingled with a subtle combination of aromas: crystallized fruit, honey,wax, forestfloor and a spicy note… Perfect served as an aperitif accompanied by lightly spiced foie gras canapés. May also complement and epicurea nmeal,such as haunch of venison or rabbit stuffed with prunes.
