A relatively unknown country when it comes to wine fame yet one that holds a treasure chest of delights should you have the opportunity to explore them. An impressive 22,300 hectares of vineyard and a population of just over two million (2.1) sees approximately 10.5 m2 of vineyard to every Slovenian.

What is a Pétillant Naturel (Pét-Nat) sparkling wine?
Pét-Nat is made via the Méthode Ancestrale which is the oldest way of making sparkling wines dating back to the 16th century, the method was said to have been created in the Limoux region of France by monks. Instead of the yeast sediments being removed from the bottle once fermentation has occurred, the Pét-Nat method sees the wine being bottled and stored prior to fermentation finishing thus the yeast is not extracted and remains in the bottle.
Sparkling Rosé by Tajfl Winery – Pétillant Naturel
The Tajfl pet nat žametovke comes from the winery Tajfl which is located in the Eastern side of Slovenia which borders both Croatia and Hungary via the Podravska Wine Region (Bizeljsko Sremič).
Tasting notes: “Depending on yeast mixture. Pink rose petals, fresh raspberry skin aromas. Very dry. Clean clear pink floral and red berries with no yeast to silky, yeasty pink floral and red berries with plenty of lees mixed.”
