Silk Dressed Rhubarb Cocktail

Let’s slip into our silk dresses (we all know you have one) and delve into our cocktail making skills by crafting a Silk Dressed Rhubarb Cocktail, incorporating a Slovenian Sparkling Wine and a Rhubarb Gin to help bring out the finest flavours that Rhubarb has to offer.
The Sparkling Wine – HUBA
HUBA Wine Growing and Oenology is a new family estate, creating their wines in the image of their noble soil, gentle sunshine, mild climate and the hard work gifted by their people.
They worked hard to include their vineyards in the Agri-Environment Climate Programme (KOPOP), where they protect their soil against erosion through continuous grass planting, keeping up to date on pest control, not adding any synthetic mineral nitrogen and avoiding the use of insecticides.

Aroma – “Soft pink floral, freshly picked ripe strawberries, crushed raspberries, pink blossom, lavender and more natural goodness on the aroma.”
Flavour – “Sharper strawberries initially, fuelled by the bubbles, a touch of herbal gardens with nettles and chives, then back to the berries, with redcurrant, black cherry juice and raspberries on the palate.”

The Gin – Slingsby
Beginning in North Yorkshire, in the town of Harrogate, Slingsby Gin was founded by Marcus Black and Mike Carthy who both embarked on this adventure together, it took over 15 months and 18 different variants of Gin blends before they found the perfect recipe.
The inspiration for the name ‘Slingsby’ came from the real William Slingsby, who in 1571 discovered the unique properties of the natural spring water from Harrogate’s Tewit Well. His discovery brought thousands of visitors to ‘take the waters’ which were thought to have medicinal properties and to this day, people from all over the world visit the spa town to restore their body, mind and soul.
Slingsby Gin’s mission is to capture the ‘Spirit of Harrogate’ and deliver it in a bottle for you to enjoy from anywhere in the world.
Their Rhubarb Gin is made with fruit from the ‘Rhubarb Triangle’ establishment in Wakefield.

Ingredients
- Rosé Sparkling Wine
- Rhubarb Gin
- Ginger Syrup
- Rhubarb Syrup
How To Make The Silk Dressed Rhubarb Cocktail
- Begin with 15mls of Rhubarb Gin
- Add 5mls of Ginger Syrup
- 25mls of Rhubarb Syrup
- Then finish with 100mls or simply top up with Sparkling Wine

Aroma – “Soft, delicate rhubarb, very well cooked and soaked in honey/syrup. Pink floral, with hints of strawberry on the aroma.”
Flavour – “Very delicate, rhubarb birthday cake icing sugar, soft rhubarb and pink grapefruit, syrupy, hints of sweet ginger, pink floral and blossom notes with a final touch of strawberry at the close.”
