First and foremost, this is not going to be a cheap cocktail to create, utilising a limited and vintage bottle of English Sparkling Wine, an English Sparkling Wine that truly does deserve to be enjoyed on its own, so as crazy as it sounds, I’ll be including it within this The Fox And The Hare Cocktail, a creation for those truly special moments.
The Fox – English Sparkling Wine
Fox & Fox was created from the love of Jonica Fox and her husband Gerard Fox who both planted their first vine in 2004, it was Gerard who inspired Jonica to get into the fizz business after he tasted some English Sparkling Wine at an event in London in 2003, and by 2009, they had started producing their own English Sparkling Wine. They currently own 30 acres and grow the following grapes: Chardonnay, Pinot Gris, Pinot Noir and Pinot Meunier. They are also the ones to credit for producing the World’s Finest Glass of Bubbly for 2021.

Aroma – “Crisp cooking apples, ready salted crisps, hints of floral and dry cheese, finishing with white blossom and peach skin aromas.”
Flavour – “Smooth and crisp green apple juice, zesty green fruits, with hints of honey on the palate.”

The Hare – Whittaker’s Gin
Whittaker’s Gin is a family business run from their home, at Harewell House Farm, right in the heart of Nidderdale in North Yorkshire.
The aim of Whittaker’s Gin is to produce an artisan small batch, handcrafted spirit, which reflects the Yorkshire countryside in a bottle, and they’re proud to have achieved their goal.
They macerate all their berries for 24 hours prior to distillation, they also use garden thyme which is picked fresh from their garden on the morning of the distillation. Their original distillery is an old 1950s pig shed which is still very much in use as their storage, bottling, and labelling facility for their gins and other spirits.
Whittaker’s Gin – Original Edition – Tasting Notes – “Smooth juniper, angelica roots, coriander, with sharp Bilberries, their signature botanical coming through, hints of foliage and a subtle sweetness.”

Ingredients
- English Sparkling Wine
- English Gin
- White Chocolate
- Elderflower Liqueur
- Rosemary
How To Make The Fox and The Hare Cocktail
- Start with melting the White Chocolate and delicately spreading it in a spiral shape around the outside of your Glass
- Pour in 15mls of Gin
- 100mls of Sparkling Wine
- 5mls of Elderflower Liqueur
- Gently place in a Few Twigs of Rosemary

Aroma – “Carefully nurtured rosemary with blossoming elderflowers, a gentle touch of juniper berry, with vibrant crisp green apples and zesty green fruits, along with faint hints of white chocolate on the aroma.”
Flavour – “A natural flavour experience, with freshly picked rosemary, blossoming elderflower, ready-to-pick crisp green and zesty green apples, along with some extra floral, juniper, foliage and a divine touch of sweetness from the white chocolate on the lips.”
