The Oak Sundae Cocktail

We’ve all heard of the famous Ice Cream Sundae, the delicious ice cream dessert, but have you yet discovered The Oak Sundae, a combination of bubbly sparkling wine, aged rum and some smooth alcoholised coffee?
The Oak Barrel is an important component in the world of alcohol, and when it comes to Traditional Method Sparkling Wines and Rum, it’s paramount to help deliver an excellent and sought-after flavour profile, this is what this Cocktail draws its inspiration from, incorporating creamy smooth vanilla ice cream and some sweet spices for good measure.
The Sparkling Wine – Založnik
Založnik hosts both a vineyard and fruit farm, cultivating and fulfilling their tradition for the past four generations, since 1911.

Located on the slopes of Pohorje, on the golden green hills of beautiful Škalce, above Slovenske Konjice. Their vines grow on the highest terroir of the famous Škalce, where the sun is abundant throughout the year.

- Coffee Liqueur
- Dark Rum
- Ginger Syrup
- Sparkling Wine
- Vanilla Ice Cream
How To Make The Oak Sundae Cocktail
- 25mls of Coffee Liqueur
- 25mls of Dark Rum
- 5mls of Ginger Syrup
- 125mls of Sparkling Wine
- Add 3 Scoops of Vanilla Ice Cream
- Then Sprinkle on some Ground Cinnamon and Ginger
Oak Sundae Cocktail Tasting Notes
Aroma – “Warming, relaxing, smooth and creamy, lovely cinnamon and ginger on slowly melting vanilla ice cream, then the coffee and even toffee come through to join the aroma.”
Flavour – “Smooth, creamy, coffee centred, with smoothing barrel aged rum, delicately placing itself in the mix with nutty, toffee and caramel characters, hints of ginger soak into the melting vanilla ice cream with the sparkling wine adding a dash of lemon, its easy to get caught up in enjoying this cocktail and forget that the alcohol is involved, so be careful, but enjoy all the flavours this cocktail has to offer.”
