It’s time to embrace the freedom of the open waves and divine display of the Indian Ocean, traveling from Mauritius to New Zealand, we’re picking up the best ingredients to craft The Palm of the Indian Ocean Cocktail.

The Sparkling Wine – No.1 Family Estate

No.1 Family Estate was created in 1977 by Adele & Daniel, they chose the name No.1 Family Estate in recognition of the many ‘firsts’ in New Zealand wine they had achieved over the years while working on their first venture, Cellier Le Brun.

They released their very first Cuvée No.1 on Bastille Day in 1999 and in 2012 their No.1 Assemblé was the first wine in New Zealand to be labeled ‘Méthode Marlborough’ in place of Méthode Traditionelle.

No.1 Family Estate – No.1 Assemblé – Tasting Notes

Aroma – “Lovely dark, well-baked pastry, surrounded by rich green apples and yellow fruits, sweet lime and a touch of savory notes, with cured meats and gammon.”

Flavour – “Initial zesty characters, from green, white and yellow fruits, a lovely display of the terroir, with chalk, minerals and wet stones, now we’re getting the toasty notes, powerful, but calm enough to allow the other flavours to continue shining alongside.”

The Rum – Bougainville

Located in the island country of Mauritius and created by the Oxenham Craft Distillery, which was launched in 2010 by the Oxenham Family, they are one of Mauritius’ youngest and smallest distilleries situated in the region of Phoenix, the island’s center.

Bougainville Rum was named after the 18th Century French navigator Louis Antoine de Bougainville, who called in at L’Ile de France (now Mauritius) in 1768, following an expedition commissioned by Napoleon to sail around the earth.

How To Make The Palm of the Indian Ocean Cocktail

  1. 15mls of Bougainville White Rum
  2. 100mls/top-up of Sparkling Wine
  3. A drop of  Moroccan Almond Extract
  4. A drop of Madagascan Vanilla Extract

Tasting Notes

Aroma – “Gorgeous almond, silky smooth, with notes of vanilla pastries, freshly baked pastry and brioche.”

Flavour – “Refreshing crisp green apples and green pears, with notes of silky almonds and vanilla with baked pastries, and zesty green apples/citrus finish.”
