There is an increasing number of people searching for and purchasing Bovaer free meat and milk, so we decided to visit our local farm shop, Wallis’s Farm Shop Butchers, and taste their burgers whilst pairing with a classic Italian Spumante.

How were the farm shop burgers?
They do not shrink when we cook them, very encouraging initially! Certainly, I would recommend seasoning when cooking; a pinch of salt and pepper improves the meaty flavours. Meat flavours are juicy and tender and they release very little fat once cooked. These were pan-fried, no need to add any butter / lard / olive oil as there is a sufficient amount of fat in burgers.
So, if we have these meaty and pleasingly filling British farm shop beef burgers, we are going to need a refreshing sparkling wine to cleanse our palate. For the accompanying wine, we are travelling over to Italy and west of Parma to the newly formed winery Tenute Venturini Foschi. A full range of wines to choose from, which includes a silver medal winning millesimato spumante named Sophia.
This wine achieved a Silver Medal in the Light & Fruity category of the 2025 Glass of Bubbly awards. A refreshing sparkling wine oozing acidity of yellow fruits with an increasing silky floral and yeasty notes in mid palate to close. Easily cleanses the palate and is bold enough to clean any oily / greasy texture from the palate and leave deeper food flavours alongside a yellow fruit display from the wine itself.
Burgers and sparkling wine are a great combination, from Champagnes to Prosecco. A decent Spumante wine is a great medium budget option, as Champagnes could be regarded as slightly too acidic, with Prosecco being slightly too fruity and sweet. A Brut style sparkling wine is the best of traditional method production.
