What Sparkling Wine to Pair With Enchiladas

There comes a time in every day when you venture into the kitchen and find yourself wondering what to have for dinner, will you go for a quick and easy ready meal, will you place something in the oven and wait until it’s cooked or will you find something which you’ve never tried before and live just a little this evening, as always, the choice is yours.

If your set on having something tasty from a foreign country, then may I suggest ‘Enchiladas’, originating in Mexico, the Enchilada is a corn tortilla rolled around various meats, beans and veg covered with a savoury sauce and sprinkled with cheese.

When it comes to its origins, the tortilla dates all the way back to the Aztecs, they are the first to make a tortilla and stuff it full of various foods, at the beginning, fish was the common meat to eat in a tortilla.

In the native tongue of Nahuatl they would refer to them as ‘tlaxcalli’ it was the Spanish who arrived in South America that give it the name Tortilla. When searching for this specific dish, the Enchiladas were referred to as ‘chīllapītzalli’ by the Nahuatl’s, which is simply a combination of two of their words, ‘chilli’ which means chili and ‘tlapītzalli’ which means flute.

Enchiladas were mentioned for the first time in a Mexican Cookbook, El Cocinero Mexicano (“The Mexican Chef”) which was published in 1831.
