Eggs Benedict With Sparkling Wine

This very popular and much-enjoyed breakfast and even brunch dish comes from the land of America.
When looking to make your own classic Eggs Benedict, it consists of an English muffin, split in half, with a few slices of Canadian Bacon, a Poached Egg placed on each half, then they are covered in Hollandaise Sauce.
The Story of Eggs Benedict
There are two stories that must be told when exploring the origins of this eggy delight.
The first tells the tale of a restaurant in Lower Manhattan called Delmonico’s, they state proudly on their menus, “Eggs Benedict was first created in our ovens in 1860.” Their chef Charles Ranhofer is said to have come up with the recipe in the 1860s after one of his regular customers by the name of Mrs. LeGrand Benedict asked to try something new.
That is when Chef Ranhofer’s mind started piecing together this egg dish which he named ‘Eggs a la Benedict‘, this story is partially backed up by the fact Charles Ranhofer also published this recipe in a cookbook in 1894.
The second story is set in New York City, during 1894, in the Waldorf Hotel, our lead character is a retired Wall Street stockbroker by the name of Lemuel Benedict, the night before he’d been out enjoying life with plenty of drinks, on this morning he was feeling the effects with a hangover, when he entered the hotel and sat down in its restaurant he placed an order for something which was not on the menu.
He ordered “buttered toast, poached eggs, crisp bacon, and a hooker of hollandaise”, this dish caught the eye of Oscar Tschirky, the maître d’hôtel, who perceived the dish an a new addition to the menu, but with a few tweaks, he swapped out the toast for a toasted English muffin and changed the crispy bacon to Canadian Bacon.
The Sparkling Wine
