Badagoni and BBQ

It’s BBQ season, it’s time to roll out your BBQs and start cooking some burgers, sausages and chicken, in this article we will be pairing chicken wings, simply barbecued and with sauces with a couple of bottles of Georgian Sparkling Wine from the winery of Badagoni.
While the fire gets going, let’s pop over to Georgia and open a couple of bottles of Badagoni Sparkling Wine.
Badagoni
Badagoni’s story starts in the east of Georgia in 2006, they have one of the most advanced wineries in the whole of Eastern Europe with them able to produce 6,000 bottles of still and sparkling wine in just 1 hour, even with all the technology they still remain very passionate to their Georgian traditions when it comes to making wine.

The Chicken Wings
The Chicken Wings and Sparkling Wine Pairing
Badagoni – Semi-Dry
Salsa – The Sparkling Wine neutralises the flavours of the burnt BBQ layer of chicken leaving succulent chicken flavours.
BBQ Sauce – The sweetness from the BBQ sauce and the sweetness from the Sparkling Wine combine perfectly, reacting together leaving a fresh fizziness and meaty flavours
Plain – The Sparkling Wine comes in and fades quickly leaving a subtle undertone sweetness
Badagoni – Maestro Saperavi
Salsa – A flood of chilled sparkling wine comes over the chicken, leaving subtle burnt BBQ flavours.
BBQ Sauce – Soft and chilled fruity flavours, the main sweetness comes from the BBQ sauce which has a more berry touch,
Plain – A burst of sweet red and black fruits soak into the chicken, you still get the burnt BBQ flavours on the outside.
Verdict
The sweetness from the Sparkling Wine and the burnt BBQ flavours from the chicken both work hard to come together, but don’t quite seem to meet at the perfect point, two delicious creations, that work best with the BBQ Sauce, but in my opinion, we’re best enjoying the Chicken Wings then pouring a glass of Badagoni as a closing dessert.
