“The vineyard is part of an organic mixed farm which has been in the family for five generations. I gained a lot of my wine making knowledge first from Paul Old, when he and I set up Les Clos Perdus, and more recently from Daniel Ham. Myself and Daniel are always challenging every aspect of wine growing and making. I want to give Daniel the highest quality fruit possible, year on year, and for our wines to be exceptional and full of character.” – Hugo Stewart
In the year 2016, Hugo planted the three Champagne varieties on the chalky soils in Wiltshire, and by 2018, he had the yield required for his first vintage.

- Blend: Chardonnay / Pinot Noir / Pinot Meunier / Pinot Gris
- No added sulphur, yeast, fining agent or dosage for the primary ferment. However, for the secondary fermentation, they add a biodynamic yeast from Champagne Fleury.
- Sheep graze the vineyard in the winter to keep the grass down and add fertility.
- The vineyard is on south facing chalk downland at an altitude of 90 meters.
- The wine is certified Organic and Biodynamic.
