The Perfect Sea Food Pairing

If you’re in the market for the finest selection of seafood, from salmon to caviar then you’re in for a real treat, Petrossian has provided us with the finest selection of sea treats, including the finest piece of Red Beet Salmon I’ve ever enjoyed, Russian Red King Crab and Pike Roe, with this outstanding array, we needed to find some Sparkling Wines that could accompany them, so we tried pairing them with an Italian Sparkling Wine, German Sparkling and Celebrity & Co Champagne.

These 3 Award Winning Sparkling Wines, have been well chilled and are ready to be popped open and enjoyed, we’ll get the tasting notes from each of the Sparkling Wines then dive deep into pairing them with the Petrossian Sea Food.

Codice Citra

Citra was founded in 1973 and has 6,000 hectares of vineyards, the name Citra comes from a Latin adverb, name of one of the two regions in which Abruzzo was divided on the maps, going back to the 18th century before the unification of Italy when the land was all part of different kingdoms, the name Citra, identifying the location in which the 9 associated cooperations are located is meaningful to them, it relays the message of the strong link terroir and the accent winemaking knowledge of the Chieti area.

Aroma – “Yellow blossom, honeysuckle and white pear on the aroma.”

Flavour – “Yellow floral, green fruits and citrus flavours.”

This Italian Sparkling Wine Won a Silver Medal in the Zesty & Zingy Category at the Glass of Bubbly Awards 2020.

Motzenbäcker

Motzenbäcker has a history dating back to 1758, currently, 4 generations of the Menger-Krug family is helping in creating Motzenbäckers Wines & Sparkling Wines, they all have their own specialist fields and gift new ideas to their Wine & Sparkling Wine, they all reside in the wine estate Krug´scher Hof and Motzenbäcker.

All the grapes used in a bottle of Motzenbäcker are grown on their land and they even have vines going on 40 years old.

Another interesting piece of information to take note of is that on the first full moon Motzenbäcker lumber wood to create their large moon oak barrels which contain their very best wines, with only their Chardonnay and Riesling grapes gaining entry, they are allowed to ripen in these barrels for 11 months.

Aroma – “Lovely Riesling aromas of petroleum, freshly cut grass and nettles.”

Flavour – “A green taste of nettles, freshly cut grass and green citrus on the palate.”

Celebritys & Co

Celebritys & Co was founded by Christophe Kuo. It has an elegant Taiwanese label and is mainly enjoyed in Taiwan. As you know Champagne can only be called Champagne if it is grown in the Champagne Region in France, so how does this Taiwan label call itself Champagne, the answer, they are supplied from a grower Champagne from France. Here are a few words from the founder, Christophe Kuo:

The very first own label Champagne (CELEBRITY’S & CO.) launched in Taiwan in 2016. It has been a crazy journey of our Champagne business since 2013.

This creation was made by Taiwanese living in Vision, Imagination and Passion. The prestige cuvée was the product of France by an independent Champagne winery. It’s a very unique Champagne dedicated to women’s Beauty, Elegance and Wisdom.

Personally, I fall in love with her with all my heart. I sincerely recommend you to enjoy this fine and rare Champagne with people whom you love.

Aroma – “Silky yellow fruits, yellow blossom, flaky pastry, brioche, toast, oak and more from this Champagne on the aroma.”

Flavour – “Very much the same as on the aroma, lovely silky yellow fruits and yellow blossom with brioche, toast and more on the palate.”

This Champagne Won a Gold Medal in the Gastronomic Category at the Glass of Bubbly Awards 2019.
