A visit to Slovenian Sparkling Wine Silveri

“A modern feeling brand with fine traditional values enabling you to experience the heart of Slovenian wine and food” is very much how I would sum up Silveri. A relatively young brand having been established in 2001, one of the first sparkling wine houses of the Brda region thanks to the founders Gasparin family’s vision.
The winery offers a selection of still wines as well as some very fine sparkling wines including a 100% Rebulla Gialla. With a collection of awards to their name already, Silveri is most certainly a sparkling wine of the world to have on your bucket list and the fine flavours produced by this winery also make them ideal for food pairing which is where the second part of Silveri comes in to play with the Gasparin’s famous restaurant Pikol Restaurant.
Current owner Boris Gasparin is at the head of the family business, a respected chef and sommelier internationally, his selection of Silveri wines along with Pikol restaurant can really show you the treasures that Slovenia can offer any visitor and lover of wine and food. During our brief trip to Silveri we were welcomed to Pikol and had the opportunity to experience first hand Boris’s passion for his wine and food.
My notes for some of the Silveri wines I tasted include:
Silveri Cuvée Nature: “8 years on the lees. Citrus, pastry nose. Lively yellow fruit flavours with a fine smoothness.”
Silveri Brda Cuvee Brut: “Light floral and vanilla nose. Light crisp flavours with smooth orchard fruit flavours.”
Silveri Brda Brut Rosé: “Meaty aromas. Red berry fruits and smooth in the mouth. Easy to drink, paired with fish dishes including scallops.”
Silveri Brda Tenor 2012: “Red berry and plum flavours, light and smooth. 70% Merlot 30% Cabernet Franc. 13.5% alcohol. 2012 Tenor. Let it breathe and aromas and taste will develop.”
Silveri is very much a family business and both sons, Taras and Tadej, work alongside Boris and winemakers and within the restaurant.
