Let’s Meet The Bartender!
“Ismail Merzouk, 27 years of Moroccan origin, I live in Rabat, I follow a two-year training program in restaurant technician and a certificate in bartender mixology, as well as six years of work experience in the hotel industry. In 2019, I had the opportunity to work as a bar clerk in a piano bar, which allowed me to evaluate my knowledge of the basics of bartending and mixology. Subsequently, I worked in several high-end establishments as a bartender, allowing me to become a professional mixologist in the hotel industry. Despite this, I am learning that I will never stop learning about the industry. Things will emerge.
Because of my love of coffee, my favorite cocktail is the classic espresso martini.” – Ismail Merzouk
What Inspired You To Create Your Rabat By Night Cocktail?
“RABAT BY NIGHT is a pleasant and energizing aperitif that can be consumed at any time of the day. The idea behind this delicious drink came from trying to find a balance between sweetness, acidity and alcohol, which gives a pleasant flavor.”
As A Bartender, What Does A Typical Day Look Like For You?
“My typical day as a bartender is to be ready to offer the best possible service for the clients who flock. My job is to serve them as best I can. It means making the best cocktail but also taking the time to chat with them. Psychology and business sense allow me to anticipate the desires of my customers and guide them in their choice of drink.” When you love, you don’t count. And you give.”
