It’s Great To Speak With You, Mrs. Laurence Ployez, Can You Tell Us A Little About Yourself & How Your Journey Into Champagne Ployez Jacquemart Began?

“Family problems brought me back to Champagne in 1988”

Do You Remember Your First Experience With Champagne? When It Was And What Kind Of Label It Was?

“First experience, I was too young ( 1rst day of my life as a traditional custom JJ ) but I will give you my two best memories which were with my father in the eighties:

The first was to taste some Piper Rare 1976 during one event at the CIVC.

Secondly a very special tasting with ‘connoisseurs’ to compare our Cuvée de Prestige: L. D’harbonville 1975 against a Krug Champagne same vintage.”

How Rewarding And Challenging Is Managing Your Own Champagne House?

“This is a work of love and Passion, then you can choose, and create great wines to share with people who understand, this is pure joy.”

What Part Of The Wine Making Process Do You Enjoy The Most?

Between the harvest, when we receive the grapes juices in our VAT to the day we are blending to succeed to extract the best of every harvest. New change every year, because every harvest is different.

And the last part, when I can taste my Champagne in the best restaurants in Switzerland, USA etc…”

When It Comes To Pairing Champagne With Food, Do You Have Any Favourite Combinations That You Would Personally Recommend?

“Working in the kitchen before coming back to the Domaine, I love a lot of things.

I think, Champagne wines are so rich with different blends, winemaking, all the different cépages, ageing, and so forth….., you can find almost a Champagne to pair with so many dishes.

From the Japanese seafood which is so delicate, to some spicy food, Champagne will bring elegance, purity, freshness balance to a lot of amazing food.”

What Future Plans Can Enthusiasts Of Champagne Ployez Jacquemart Look Forward To In The Coming Years?

“We are working hard to create the future Cuvée for the 100 year birthday of the Domaine. This is the challenge of this harvest 2024.”

Can You Share With Us One Of The Most Memorable Experiences You’ve Enjoyed With A Glass of Bubbly?

“For New Year’s Eve of 1999, we drank our last Magnum of Extra Brut Vintage 1975 Blanc de Blancs with my family. It was amazing.”
