The beauty of Champagne is that is both a great wine to drink and equally impressive when paired with foods. Without doubt the popularity of pairing Champagne with food has grown and expanded without fear so we are much more accepting to and agreeing with titles such as ‘Pairing Champagne with Fish & Chips‘ and similar.

A recent package received at our office was the three grower Champagnes for New Year’s Eve from Champagne Hub, and from their accompanying booklet, we wanted to follow up their recommendations for food pairings.

It’s a very pleasing pairing in that both dishes are quite delicate and light. There is a blast of fizz when paired initially releasing citrus flavours from the Champagne and the savoury meat flavours from the veal with the length fading with a touch of creamy yellow fruits.

The Champagne is very apple aroma and flavour driven. The salty / sea breeze taste sensation from the oysters neutralises the acidic taste sensation from the Champagne though leaving a touch too much sweeter apple in the length.

I am not a person in love with oysters though having lived in Colchester in England I am very familiar with them and have tasted some of the best. I’d have preferred a much more crisp and dry connection here to almost leave a quick fade of all flavours allowing the oysters, which for the above pairing were ‘naked’ (no garnish or condiments), to show flavours soon after.

The Champagne is so clear and clean that it cuts through any cheese fat and leaves you with just the highlights to enjoy. The suggestion is hard cheese though we went for three varieties from soft/creamy to hard. All of the cheeses were great with the Champagne, it was a delight to taste – For me, the creamier cheese was a perfect match allowing the Champagne to cleanse the palate and leave the delightful creamy flavours from the cheese and delicate citrus / yellow fruits from the wine.
